There are mornings when the line at Billy's Downtown Diner stretches out the door and down East Broad Street in Bethlehem. People stand there happily, coffee less and hungry, because they know what's waiting inside is worth it. This is not a chain. This is not a franchise. This is a diner that makes everything from scratch and has been doing it since September 2000.

The Billy Kristo

Every diner needs a signature dish, and Billy's has one of the best in the state. The Billy Kristo is a French toast sandwich: thick slices of challah bread, griddled until golden, stuffed with your choice of filling, dusted with powdered sugar, and served with a side of vanilla bean glaze for dipping. It is sweet and savory and completely unreasonable in the best possible way.

First timers always order it. Regulars pretend they're going to order something else, then order it again. The kitchen has made hundreds of thousands of them over the past two decades, and they have not gotten lazy about a single one.

Scratch Made Everything

What separates Billy's from the average diner is the commitment to cooking from scratch. The pancake batter is made in house every morning. The corned beef hash is hand cut, not canned. The hollandaise for the eggs Benedict is whisked to order. Even the hot sauce is a house recipe.

The menu is bigger than you expect. Beyond the breakfast staples, you'll find creative omelets, stuffed French toast variations, and lunch plates that include burgers, sandwiches, and salads. Billy's is also BYOB, which means you can bring a bottle of prosecco for Sunday brunch without paying restaurant markup.

Two Locations, Same Standard

The original Billy's sits at 8 East Broad Street in downtown Bethlehem, steps from the Hotel Bethlehem and the heart of the Main Street shopping district. The space is classic diner, with counter seating and booths, but cleaner and brighter than the word "diner" might suggest.

A second location opened at 123 South 3rd Street in Easton, bringing the same menu and the same quality to the other end of the Lehigh Valley. The Allentown location, which operated for years on Hamilton Street, has since closed, but the Bethlehem and Easton spots continue to draw crowds every weekend.

The Plant Based Pivot

One of the smarter things Billy's has done in recent years is embrace plant based options without making a big deal about it. You can get a tofu scramble, a veggie burger that actually tastes good, and dairy free pancakes alongside the classic bacon and eggs. They didn't announce a whole new concept. They just quietly added options so that everyone at the table could eat well.

That kind of unpretentious inclusivity is very Lehigh Valley.

Why It Matters

Billy's opens at 7 AM and closes at 3 PM. It serves breakfast and lunch only. In a world of all day menus and 24 hour chains, there is something admirable about a restaurant that says: we do this one thing, we do it really well, and then we go home.

The staff knows the regulars by name. The food comes out fast because the kitchen has been executing these dishes for a quarter century. And the check at the end is reasonable enough that you can bring the whole family without doing math in your head.
