La Madame Biscuit on the South Side of Bethlehem is exactly that kind of place. From the moment you step through the door at 716 E 4th Street and see the rows of beautifully crafted gourmet cookies, you know you are in the hands of someone who takes their craft very, very seriously. That someone is Despina Giampilis.

Gourmet Cookies, Valley Heart

La Madame Biscuit specializes in gourmet cookies baked from scratch in small batches every single morning. Despina offers nearly 20 varieties on a regular rotation, with top sellers like Simply Chocolate Chip, Folie Funfetti, Salted Chocolate Toffee, and PB Protein always in the case. Beyond those staples, three rotating weekly flavors keep regulars checking back for what is new. What sets the shop apart is its range: the menu includes gluten-free options and protein-packed cookies, including a peanut butter chocolate chip cookie with 20 grams of protein and only 170 calories.

But La Madame Biscuit is more than a cookie shop. The storefront doubles as a coffee bar, serving specialty hot and iced drinks from cappuccinos and macchiatos to lattes and seasonal creations, all made with their own house blend, which customers can also take home as whole beans or ground. Cookies and coffee under one roof, and both done with real intention.

The Path to the Cookie

Despina's journey to opening La Madame Biscuit starts with a simple moment: her then three-year-old son asked her to make cookies. The daughter of Greek immigrants, Despina grew up in Montreal, Canada, in a family of small business owners who instilled in her a serious work ethic. She studied finance and marketing in college, but always felt pulled toward something more creative.

That first batch of cookies came out flat as pancakes. For most people, that would have been the end of it. For Despina, a self-described perfectionist, it was the beginning. She spent the next six months baking every single day, keeping a binder to track every recipe adjustment, with her young son right beside her in the kitchen. By the time she had perfected her chocolate chip cookie, she had found her calling.

Despina had moved to Bethlehem in 2014 after marrying her husband Michael. Her green card application process prevented her from working a traditional job when she first arrived in the U.S., which, as it turned out, became the push she needed to build something of her own. After neighbors and friends started raving about her cookies, a friend encouraged her to sell and ship them nationwide. La Madame Biscuit was officially born in January 2020, and even through the uncertainty of the pandemic, demand grew steadily through online orders shipped across the country and into Canada.

By the time Despina was producing 500 to 600 cookies from her home oven, Michael suggested it was time for a real storefront. A vacancy opened in one of his buildings in October 2022, and they began the process, though navigating city approvals and renovations stretched the timeline considerably. The shop finally opened its doors on October 29, 2024, and Despina described herself as "beyond excited."

A South Side Gem

La Madame Biscuit has quickly become an essential part of the South Side's identity as a destination for food and shopping. The bakery draws visitors from across the region and ships cookies nationwide, building a reputation that extends well beyond the Lehigh Valley. You can order in store, online for pickup, through DoorDash for local delivery, or have a box shipped anywhere in the U.S. or Canada. It is the kind of place people tell their friends about.

Despina is also deeply connected to the community around her. In February 2025, she hosted a Valentine's Day pop-up at the shop alongside her longtime friend Georgia Dontas, owner of the clothing boutique PRINCE + BROOME. The two have been friends since 2011, and Despina's success launching La Madame Biscuit during the pandemic actually inspired Georgia to start her own business in 2021. That kind of creative energy (friends lifting each other up, businesses collaborating instead of competing) is exactly what makes the South Side special.

For the Lehigh Valley, La Madame Biscuit is proof that world class does not require a big city address or a formal culinary degree. It just requires someone with the drive, the creativity, and the perfectionism to turn a flat batch of cookies into something extraordinary. Despina Giampilis is all of that: a mom of three, an immigrant, a self-taught baker, and a small business owner who built her dream one recipe adjustment at a time. Her little shop on the South Side is one of the sweetest treasures in the entire region.
